Yi Mian, also known as longevity noodles or e-fu noodles, are a celebratory dish deeply rooted in Chinese culinary tradition. These round, pre-fried noodles made from wheat flour and egg are unique in that they can absorb large amounts of liquid without falling apart, making them ideal for braising. The noodles are braised in a rich sauce made from chicken stock, oyster sauce, dark soy sauce, and sugar, with the addition of sliced shiitake mushrooms, wood ear fungi, and sometimes dried lily buds. The braising liquid is absorbed into the noodles, making them incredibly flavorful throughout rather than just on the surface. The finished dish is typically garnished with scallions and served in the pan or on a large platter. As their name suggests, longevity noodles are traditionally served at birthdays and celebratory occasions as a symbol of long life — it is considered bad luck to cut them before eating, so they are typically eaten as long as possible.
